Slice the apples into chunks and remove the cores. Work quickly to keep them from browning while exposed to air.

Put the apple pieces, honey, and water into a large pot. Bring it to a boil, then turn the heat way down. Let it bubble gently for 15 minutes, mashing the apples occasionally to get their juices flowing.

Take the pot off the burner and let it cool completely. Push the mixture through a fine strainer into a bowl or pitcher, lightly pressing on the apple chunks to extract every last drop of liquid. Toss the leftover mush afterward.

Add 2-3 tablespoons of apple syrup to each glass. Top with fizzy soda water, throw in ice cubes, and stir gently to combine.
