Soft Greek Yogurt (Print Version)

# Ingredients:

01 - 100g sugar.
02 - 11g baking powder (1 packet).
03 - 2 eggs.
04 - 150g plain Greek yogurt.
05 - 150g flour.

# Instructions:

01 - Turn your oven on to 180°C. Line a baking tin with parchment or grease and flour it.
02 - Beat together the sugar and eggs until it turns light and fluffy. Stir in the yogurt.
03 - Sift the baking powder and flour, then gently fold into the wet mixture. Avoid overmixing.
04 - Pour the batter into your prepared tin. Bake for 25-30 minutes. Stick a toothpick in the center—it’s done when it comes out clean.
05 - Let it cool a bit in the tin before taking it out. Move it to a rack to finish cooling.

# Notes:

01 - Try adding citrus zest or chocolate chips for variety.
02 - Keep in an airtight container. It lasts 2-3 days.
