Brown sausage, pour off grease. Mix in flour, slowly add milk while stirring until it gets thick.

Set oven to 400°F. Spread oil on crust (if desired), then spoon half of the gravy over it.

Whisk eggs with the milk and scramble them lightly until mostly firm.

Add the eggs over the gravy layer, then sprinkle cheese on top.
