Cheesy Gratin Steak (Print Version)

# Ingredients:

01 - 2 thick-cut ribeye steaks (about 2.5 cm thick).
02 - 4 tablespoons of unsalted butter.
03 - 1 1/4 cups of whole milk.
04 - 1/2 cup grated Parmesan cheese.
05 - 2 garlic cloves, minced.
06 - 2 tablespoons olive oil.
07 - 1 cup shredded Gruyère cheese.
08 - 2 tablespoons of all-purpose flour.
09 - 2 sprigs of fresh thyme.
10 - Freshly grated nutmeg.
11 - Salt and freshly ground black pepper.

# Instructions:

01 - Heat some olive oil on medium-high in a skillet. Sprinkle salt and pepper over the steaks.
02 - Sear each side of the steaks for about 3-4 minutes. Toss in garlic, thyme, and butter, and baste while cooking.
03 - Melt butter in a pot, then whisk in the flour for 1-2 minutes. Gradually pour in milk while whisking. Season to taste.
04 - Pour the creamy sauce over the steaks. Top with both cheeses and broil in the oven at 180°C for 3-4 minutes.
05 - Finish with a sprinkle of fresh thyme and a dash of black pepper.

# Notes:

01 - The béchamel should turn out smooth, with no lumps.
02 - Let the meat sit for a few minutes before pouring on the sauce.
