Grain Free Sugar Cookies (Print Version)

# Ingredients:

→ Cookie Base

01 - 1/4 cup coconut oil, melted and cooled
02 - 1 1/2 teaspoons vanilla extract
03 - 1/4 cup baking Stevia
04 - 1/2 cup grass-fed butter, softened
05 - 1/4 cup sugar
06 - 2 cups almond flour
07 - 1 egg
08 - 1/2 teaspoon salt
09 - 1/2 teaspoon baking soda
10 - 1/2 cup coconut flour

→ Chocolate Glaze

11 - 2 drops pink food coloring
12 - Sprinkles, optional
13 - 1/2 cup white chocolate chips
14 - 1 tablespoon coconut oil

# Instructions:

01 - Stir together all the dry stuff. Cream the butter, coconut oil, sugar, and Stevia. Toss in the egg and vanilla, then slowly mix in the dry blend.
02 - Shape the dough into a ball, wrap it up in plastic wrap, and let it chill for at least an hour or overnight.
03 - Roll the dough out to about 1/4 inch thickness with some parchment under and over it. Use cutters to make shapes and bake for 10-13 minutes at 350°F until they're lightly golden.
04 - Microwave the chocolate chips with the coconut oil until melted. Stir in the food coloring, dip the cookies when cool, and finish with sprinkles if you like.

# Notes:

01 - Keep in an airtight container for up to a week.
02 - Freeze the cookies without glaze for 3 months.
