Set your oven to 180°C and let it heat up.

Lay the puff pastry down flat on your workspace.

Combine mustard with crème fraîche. Adjust the ratio the way you like it.

Put one sausage about 2 cm from the edge of the pastry, roll it up to secure it, then trim off the extra. Do this for all the sausages.

Brush the tops with the egg yolk and sprinkle on the Provence herbs.

Pop them in the oven for around 20 minutes until they've turned golden brown.
