Cherry Goat Cheese Toast (Print Version)

# Ingredients:

→ Base

01 - Two teaspoons of extra virgin olive oil for brushing
02 - 12 baguette slices, about 1/2 inch thick each

→ Toppings

03 - A generous tablespoon and a teaspoon of sweet honey
04 - 24 cherries, halved and pitted (fresh or frozen)
05 - Half a teaspoon of flaky salt for seasoning
06 - A small handful of rosemary leaves, plucked from one sprig
07 - A tablespoon of balsamic glaze (store-bought or homemade)
08 - 1/4 cup creamy goat cheese
09 - 1/4 cup smooth cream cheese

# Instructions:

01 - Brush each slice of baguette with olive oil on one side. Place them in a 375°F oven and let them bake for 7-8 minutes. Flip them halfway through so they’re golden outside but still soft inside.
02 - Lay the cherry halves (cut-side facing up) on a parchment-lined tray. Scatter rosemary leaves on top and drizzle a little olive oil. Bake them for 5-7 minutes alongside the bread. Toss out the rosemary leaves after roasting.
03 - In a food processor, blend the cream cheese, goat cheese, a teaspoon of honey, half a teaspoon each of lemon juice and zest. Mix it until the texture is silky smooth.
04 - Layer the cheese mixture over the toasted bread slices. Top with 2-3 pieces of roasted cherries on each. Drizzle with balsamic glaze and honey, then sprinkle on rosemary and flaky salt to finish.

01 - Store any extra roasted cherries in your fridge for up to 3 days.
02 - You can make the cheese mix ahead of time—place it in a sealed container and refrigerate for no more than 5 days.
