Garlic Parmesan Veggies (Print Version)

# Ingredients:

→ Vegetables

01 - 2 yellow squash, cut into 1/2-inch slices
02 - 2 zucchini, cut into 1/2-inch slices
03 - 14 ounces of tomatoes, cut in half

→ Seasonings

04 - 4 garlic cloves, finely chopped
05 - 3 tablespoons of olive oil
06 - A pinch of salt and pepper
07 - 1 1/4 teaspoons of Italian herbs
08 - 1 cup of grated Parmesan
09 - Optional: Parsley for sprinkling

# Instructions:

01 - Preheat your oven to 400°F. Cover a baking tray with parchment.
02 - Combine olive oil, garlic, and Italian herbs. Wait 5-10 minutes.
03 - Coat the veggies well with the oil mixture.
04 - Put veggies on the tray and sprinkle Parmesan on top.
05 - Pop in the oven for 25-30 minutes, until the vegetables are soft and the cheese is golden.
