Garlic Parmesan Chicken (Print Version)

# Ingredients:

01 - 2 big pieces of chicken breast

→ Coating Ingredients

02 - 4 tablespoons almond flour or Gluten-Free Bake Mix 2
03 - 2 tablespoons of Parmesan cheese (from a shaker)
04 - 1/2 teaspoon of salt
05 - 1/4 teaspoon ground black pepper

→ Sauce with Garlic, Butter, and Parmesan

06 - 2 tablespoons salted butter
07 - 3 tablespoons minced garlic
08 - 1 1/4 cups of stock from chicken
09 - 1 cup of heavy whipping cream
10 - 1/4 cup of shredded Mozzarella
11 - 2 tablespoons Parmesan cheese
12 - 1/2 teaspoon of dried parsley or cilantro
13 - 2 teaspoons of freshly chopped parsley or cilantro

# Instructions:

01 - Cut the chicken breasts into thinner pieces lengthwise. Mix almond flour or Gluten-Free Bake Mix 2, Parmesan, black pepper, and salt in a small dish. Coat both sides of each chicken piece with the mixture.
02 - Pour some olive oil into a large skillet and warm it up on medium heat. Fry the chicken, flipping them a couple of times, until both sides are golden and the meat's mostly cooked through.
03 - Using a different skillet, melt the butter on medium-low. Toss in the minced garlic and stir it until it gets a light brown color. Blend in the chicken stock, Mozzarella, whipping cream, Parmesan, and dried cilantro or parsley. Keep mixing it until all the cheese is melted.
04 - Put the cooked chicken pieces into the sauce mix. Let it simmer for a minute or two so the chicken becomes tender and thoroughly cooked. To finish, sprinkle with fresh parsley or cilantro on top and serve.
