Set your oven to 200°C/400°F. Sear chicken for 3-4 minutes per side in some oil until it turns golden.

Fry onion and pepper for about 12 minutes until they’re soft. Toss the chicken back in, then mix in the pesto.

Cut the baguettes in half lengthwise and bake for around 7 minutes.

Layer the bread with the chicken mix and sprinkle generously with cheese.

Bake everything for another 5-6 minutes, or until the cheese is bubbly and browned.
