Cheesy Chicken Garlic Bread (Print Version)

# Ingredients:

01 - 2-3 baguettes of garlic bread
02 - 400g small chicken fillets
03 - 1 red bell pepper, sliced thinly
04 - 1 small red onion, cut into slices
05 - 190g jar of red pesto
06 - 250g mix of cheddar and mozzarella

# Instructions:

01 - Set your oven to 200°C/400°F. Sear chicken for 3-4 minutes per side in some oil until it turns golden.
02 - Fry onion and pepper for about 12 minutes until they’re soft. Toss the chicken back in, then mix in the pesto.
03 - Cut the baguettes in half lengthwise and bake for around 7 minutes.
04 - Layer the bread with the chicken mix and sprinkle generously with cheese.
05 - Bake everything for another 5-6 minutes, or until the cheese is bubbly and browned.

# Notes:

01 - Keep in the fridge for up to three days.
02 - Freezes well if wrapped in foil.
03 - Reheat for 12-14 minutes at 180°C.
