Crispy Mac Bites (Print Version)

# Ingredients:

01 - 14 slices (284g) of crispy bacon.
02 - 1/2 pound (227g) macaroni noodles.
03 - 2 tablespoons (30g) butter or saved bacon fat.
04 - 1 tablespoon (16g) plain flour.
05 - 1 cup (270ml) milk.
06 - 8 ounces (227g) shredded sharp cheddar.
07 - 8 ounces (227g) shredded Monterey Jack cheese.
08 - Spices (pepper, salt, garlic, cayenne, nutmeg).
09 - 1 cup (125g) plain flour.
10 - 2 beaten eggs.
11 - 1 1/2 cups (180g) panko with spices (onion powder, salt, pepper).
12 - Oil for frying.

# Instructions:

01 - Fry bacon until it gets crunchy, keep 2 tablespoons of the grease, then chop the bacon into bits.
02 - Boil the noodles for around 7 minutes, mix the grease and flour to make a paste, whisk in milk and spices, toss in cheeses, combine with pasta and bacon, and chill it for at least 3 hours.
03 - Slice into 36 pieces, roll them in flour, coat with egg, cover in panko, then freeze till you're ready.
04 - Fry for 4-5 minutes in hot oil (360-370°F), let them sit on paper towels, and serve while warm.

01 - Freeze before cooking if needed.
02 - Prepare the cheese mix in advance.
03 - Shred cheese fresh for better melting.

05 - Make double the amount, you'll need it.
