Tender Octopus Salad (Print Version)

# Ingredients:

01 - 1 octopus (about 1.8 kg).
02 - Half a medium onion, diced.
03 - Half a red bell pepper, diced.
04 - Half a green bell pepper, diced.
05 - Half a yellow bell pepper, diced.
06 - 2 garlic cloves, finely chopped.
07 - 10 green olives, sliced.
08 - 3/4 cup olive oil.
09 - 4 tablespoons vinegar.
10 - Juice of 2 limes.
11 - 2 tablespoons fresh cilantro.
12 - 2 bay leaves.
13 - Half an onion, for cooking.
14 - 2 garlic cloves, for cooking.
15 - 1 teaspoon kosher salt.

# Instructions:

01 - Simmer the octopus for 50 to 55 minutes on low heat with the onion, garlic, bay leaves, and salt.
02 - Slice the cooked octopus into bite-sized pieces.
03 - Whisk together lime juice, olive oil, and vinegar until blended into a smooth mix.
04 - Combine the octopus, veggies, olives, cilantro, and dressing. Adjust seasoning as needed.
05 - Let it chill in the fridge for at least 4 hours before serving.
