# Ingredients:

→ Seasoning Mix

01 - 1/2 tsp kosher salt
02 - 1/4 tsp onion powder
03 - 1/4 tsp cumin powder
04 - 1/2 tsp smoked paprika
05 - 1/4 tsp thyme (dried)
06 - 1/4 tsp garlic powder
07 - 1/4 tsp cayenne pepper

→ Taco Fillings

08 - 4 small tortillas (fajita-sized)
09 - 10 oz salmon fillet
10 - 1 tablespoon olive oil
11 - 2 cups pre-shredded coleslaw
12 - 1 cup cherry tomatoes, chopped
13 - 1/2 cup feta crumbles

→ Hot Mayo Sauce

14 - 1/4 cup mayonnaise
15 - 1 tbsp hot sauce of your choice
16 - 1 tsp lime juice (fresh)
17 - Pinch of salt (adjust to taste)

# Instructions:

01 - Combine the seasoning mix in a small bowl. Sprinkle it on the salmon's exposed side (both sides if there's no skin). Add a little olive oil and let it sit for 10 minutes to soak up flavors.
02 - Put some oil in a non-stick pan and heat it over medium. Lay the salmon with the flesh-side down, cook for about 3 minutes, then flip and cook another 2-3 minutes until it's done to your liking.
03 - Allow the salmon to sit for 4-5 minutes after cooking. Then, break it into smaller bite-size chunks.
04 - Stir mayo, hot sauce, and lime juice in a small bowl. Sprinkle in a little salt according to how salty you want it.
05 - Warm up the tortillas a bit. Pile on the salmon chunks, some coleslaw, feta crumbles, tomatoes, and drizzle the spicy mayo on top.

# Notes:

01 - Fajita tortillas usually measure 4.5-6.5 inches across.
02 - You can swap coleslaw mix with just shredded cabbage or leafy greens.
03 - Optional toppings you could try: avocado, cilantro, green onions, pickled onions, or jalapeños.
