Easy Turkey Soup (Print Version)

# Ingredients:

01 - 1 tbsp butter.
02 - 1 tbsp olive oil.
03 - 1 large carrot.
04 - 2 celery stalks.
05 - 1 onion or 2 shallots.
06 - 1 garlic clove.
07 - 4 sprigs fresh thyme or 1/2 tsp dried.
08 - 2 cups cooked turkey or chicken.
09 - 6 cups chicken or turkey stock.
10 - 2 bay leaves.
11 - 1/2 cup pearl couscous.
12 - 1 tbsp parsley, finely chopped.
13 - Salt and pepper as needed.

# Instructions:

01 - Melt the butter and heat oil together in a large pot.
02 - Dice the garlic, carrot, celery, and onion.
03 - Gently sauté the veggies with thyme for about 5 minutes.
04 - Stir in the stock carefully.
05 - Toss in the turkey and bay leaves.
06 - Let everything come to a bubbling boil.
07 - Sprinkle in salt and pepper to your liking.
08 - Mix the pearl couscous into the pot.
09 - Simmer for 10 minutes until couscous softens.
10 - Add chopped parsley on top before serving.
11 - Enjoy it while it's warm.

# Notes:

01 - Goes well with homemade or store-bought stock.
02 - You can replace couscous with noodles.
03 - Perfect to use up leftover turkey or rotisserie chicken.
