Toss all the ingredients in a big pot, heat it, and stir until the sugar and salt dissolve.

Once it’s off the heat, cover it and let the brine sit until it’s fully cooled down.

Put the raw turkey into a brining bag or large container, pour in the brine, and let it chill in the fridge for 16–24 hours.

Take the turkey out of the brine, throw the brine away, and let the turkey soak in fresh cold water for 15 minutes.

Dry the turkey completely after removing it from the water and roast it as you normally would.
