In a bowl, toss together meat, crumbs, egg, herbs, garlic, and seasonings. Shape into 24 balls.

Warm oil in a big skillet. Sear meatballs evenly all around.

Lower the heat. Pour in sauce, cover it, and cook for 15 minutes until meat reaches 160°.

Using pre-cooked balls? Get the sauce hot first, then throw in the balls and let them simmer for 25 minutes with the lid on.

Switch on the broiler. Place buns on a tray and slide them close to the heat.

Place three meatballs into each roll. Pour over sauce and top with cheese.

Pop them under the broiler for about 2 minutes until the cheese bubbles. Stay alert!
