Split the vanilla pod, scrape out the seeds. Heat the milk with the vanilla, then let it sit and soak for an hour.

Whisk the egg yolks and sugar together, then mix in the cornstarch and sifted flour. Slowly pour in the warm milk, stirring, and heat until it thickens.

Stir in the butter, cover the surface with cling film, and let it cool completely.

Set your oven to 180°C. Cut out 18 circles, each 9 cm across, sprinkle with sugar, and cover with baking paper and a rack.

Bake for 40 minutes until golden, then leave to cool down.

Using a piping bag, layer cream onto 12 circles and stack them up. Top with a plain circle and finish with a dusting of powdered sugar.
