Set your oven to 200°C to preheat, then spread the pastry out on a floured surface.

Slather softened butter gently over the pastry sheet, then sprinkle with most of the sugar.

Bring the edges of the pastry inwards so they meet at the center, forming a rectangle.

Roll the folded pastry into a log shape.

Slice the rolled pastry log into 6 even pieces.

Place the slices into a silicone muffin tray. If you'd like, sprinkle on the leftover sugar and brush with egg yolk for shine.

Pop it into the oven for 30 minutes. Let them cool slightly before enjoying.
