In a big pan over medium heat, fully cook the beef. Drain the fat but leave about 2-3 tablespoons in the pan to keep some flavor.

Throw in the diced onion and chopped bell pepper. Cook for 3 or 4 minutes, stirring, until they start softening up.

Add the chopped cabbage, diced tomatoes, black pepper, garlic powder, Creole seasoning, and smoked paprika to the pan. Cover it and let it cook for 20-25 minutes, checking occasionally and stirring. Taste and tweak the seasoning if you need to.

Spread the shredded cheddar all over the top. Put the lid back on and let it sit until the cheese melts fully, which should take about 2 or 3 minutes.

Serve warm. It works great as is, or you can pair it with some rice on the side.
