Take a look at each date and find the natural line. Cut along it to open them up, but leave one side connected.

Lay some parchment paper on a freezer-safe plate. Carefully open the dates to create small pockets you can fill later.

Scoop some nut butter into the pockets of each date. Add a few nuts for crunch, gently close them, and pop the dates in the freezer to firm up.

As the dates chill, melt the chocolate until smooth and shiny. Let it cool a bit so it coats the dates well.

Grab the chilled dates from the freezer and dunk each one into the melted chocolate. Use two spoons to make dipping easier and less messy.

Sprinkle some flaky sea salt on each chocolate-covered date while the chocolate is still wet. Freeze again until everything is hardened.
