Crispy Tomato Fritters (Print Version)

# Ingredients:

→ Fresh Produce

01 - 2 large garlic cloves, finely minced
02 - 1/2 red onion, finely diced
03 - 2 large tomatoes, about 250g, chopped small

→ Fresh Herbs & Seasonings

04 - 1/2 bunch of parsley, chopped fine (about 15g)
05 - Zest of one lemon
06 - A pinch of black pepper
07 - 1/2 bunch of dill, finely chopped (about 10g)
08 - Salt — about 1/2 teaspoon, or adjust to your taste

→ Dry Ingredients

09 - 85g of plain flour
10 - 1/2 teaspoon of baking powder

# Instructions:

01 - Start by chopping up your tomatoes finely and toss them into a big mixing bowl. This is going to form the base of your mixture.
02 - Throw in the onion, garlic, lemon zest, and the chopped herbs. Stir them together with the flour, baking powder, salt, and pepper to form a soft dough.
03 - Pour some olive oil into a frying pan and warm it over medium heat. Drop spoonfuls of your mix into the pan and let them brown for a couple of minutes on each side until golden and cooked through.

01 - Make these fritters to make use of ripe summer tomatoes.
02 - They're best enjoyed fresh and hot out of the pan!
03 - Serve as a simple snack or a light main dish.
