Cut eggplant into half-inch slices. Create small cuts in the center to hold sauce.

Combine soy sauce, sugar, oil, garlic, and chili oil (if you're using it) in a small bowl.

Put the eggplant rounds on parchment paper in the air fryer. Pour on the sauce, then cook at 350°F for 15 minutes. Broil for two minutes at the end if you’d like them crunchier.
