Crispy Soy Eggplant (Print Version)

# Ingredients:

01 - 1 large eggplant

→ Sauce

02 - 2 tablespoons white sugar
03 - 2 tablespoons avocado oil
04 - 2 tablespoons minced garlic (3 cloves)
05 - 2 tablespoons low-sodium soy sauce
06 - 1 tablespoon chili oil (optional)

# Instructions:

01 - Cut eggplant into half-inch slices. Create small cuts in the center to hold sauce.
02 - Combine soy sauce, sugar, oil, garlic, and chili oil (if you're using it) in a small bowl.
03 - Put the eggplant rounds on parchment paper in the air fryer. Pour on the sauce, then cook at 350°F for 15 minutes. Broil for two minutes at the end if you’d like them crunchier.

# Notes:

01 - Bake in an oven at 375°F for 30 minutes instead.
