Crispy Corn Bites (Print Version)

# Ingredients:

01 - 1 big egg.
02 - 6 tablespoons of milk.
03 - 3/4 cup sliced scallions.
04 - 2 cups of fresh or frozen corn (3 cobs worth).
05 - 1 teaspoon of vinegar (apple cider).
06 - 1/2 teaspoon each of baking powder and garlic powder.
07 - 1 teaspoon of onion powder.
08 - A pinch of cayenne.
09 - 1/4 teaspoon smoked paprika.
10 - A dash of black pepper.
11 - 1 1/2 teaspoons sea salt.
12 - 1 cup of shredded sharp cheddar.
13 - 3/4 cup cornmeal.
14 - 1/2 cup regular flour.
15 - Oil for cooking.
16 - Extra sliced scallions for garnish.
17 - Sour cream for serving.

# Instructions:

01 - Mix together the egg and milk. Toss in the corn, cheese, scallions, and vinegar.
02 - Add the spices, pepper, and salt. Give it a good stir.
03 - Stir in the cornmeal and flour until it's all blended.
04 - Warm oil in your pan. Scoop 1/4 cup per fritter, flatten a bit (about 3 inches across), and cook each side for 2-3 minutes. Fry in batches.

# Notes:

01 - Fresh corn tastes best, but frozen works fine too.
02 - Leave space between fritters when frying.
03 - They taste fantastic fresh off the stove.
04 - Yields 10 to 12 fritters.
