Cheesy Cauliflower Bites (Print Version)

# Ingredients:

→ Base

01 - 1 cup plain cottage cheese
02 - 1 head of cauliflower
03 - ½ cup breadcrumbs

→ Cheese & Aromatics

04 - ¼ cup chopped scallions
05 - ½ cup finely grated parmesan cheese

→ Seasonings

06 - ½ teaspoon onion powder
07 - ¼ teaspoon ground black pepper
08 - ½ teaspoon garlic powder
09 - ½ teaspoon salt

→ Binding

10 - 1 egg

# Instructions:

01 - Set your oven to 400°F (200°C) to preheat.
02 - Boil or steam the cauliflower for around 5-7 minutes, then drain and let it cool just a bit.
03 - Once the cauliflower cools, mash it and combine with the egg, seasonings, and cottage cheese. Mix everything until smooth.
04 - Sprinkle in breadcrumbs a little at a time while mixing. Shape the mixture into tots that are all about the same size.
05 - Put the tots on a sheet lined with parchment paper and bake them for 20-25 minutes, or until they’re crispy and golden.
06 - Let the tots cool for a bit before digging in!

03 - Make sure the tots are the same size so they cook evenly.
04 - The mixture should stick together but not be overly dry.
