Creamy Spinach Pasta (Print Version)

# Ingredients:

01 - 3 cloves of garlic, chopped.
02 - 2 tablespoons of butter.
03 - 8 ounces of raw pasta.
04 - ½ tablespoon of flour.
05 - ½ teaspoon of dried Italian herbs.
06 - ½ teaspoon Dijon mustard.
07 - 1 teaspoon of fresh lemon juice.
08 - ½ cup of chicken broth or dry white wine.
09 - ¾ cup of heavy cream.
10 - 2 cups of fresh, tightly packed spinach.
11 - ⅓ cup parmesan, grated fresh.
12 - ½ cup sun-dried tomatoes.
13 - Salt and pepper as needed.

# Instructions:

01 - Salt the water, boil pasta until slightly firm to the bite.
02 - In a pan, melt butter, add garlic and flour, and cook for half a minute.
03 - Add the seasoning, wine, mustard, and lemon juice. Let the liquid reduce a bit.
04 - Toss in the cream and tomatoes. Stir for 5 minutes as it thickens slightly. Mix in the parmesan and spinach when done.
05 - Mix your pasta with the sauce. Adjust with pasta water if too thick. Add salt and pepper, then dig in!

# Notes:

01 - Get rid of excess oil from the tomatoes.
02 - All done in just half an hour.
03 - This is a fully veggie-friendly dish.
