Kielbasa Potato Soup (Print Version)

# Ingredients:

01 - Chunky slices of 300g smoked kielbasa.
02 - 750g of cubed, peeled potatoes.
03 - One chopped medium onion.
04 - One diced medium carrot.
05 - Two finely diced celery stalks.
06 - Four garlic cloves, minced.
07 - 1.25 liters of chicken broth.
08 - 300ml whole milk.
09 - 100g shredded cheddar cheese.
10 - A handful (30g) of fresh parsley, chopped.
11 - 1 tablespoon of olive oil.
12 - Half a teaspoon of red chili flakes.
13 - Pepper and salt to your liking.

# Instructions:

01 - In a big pot, warm up some oil. Fry up the kielbasa till it's golden and crispy, then take it out and set it aside.
02 - In the same pot without cleaning, cook the onion, celery, and carrot. Toss in garlic and chili flakes after a few minutes.
03 - Pour in the broth and add the cubed potatoes. Bring everything to a boil, then simmer for about 10 minutes to soften the potatoes.
04 - Mix a bit of hot soup into the milk before adding it to the pot. Add the sausage back in, stir in the cheese till it melts, then sprinkle with parsley. Adjust the seasoning as needed.
