Creamy Seafood Bisque (Print Version)

# Ingredients:

01 - 5 tablespoons of butter.
02 - 1 sweet onion, chopped.
03 - 3 celery stalks, diced.
04 - 4 garlic cloves, minced.
05 - 1/4 cup of flour.
06 - 3 cups of seafood stock.
07 - 2 cups of warm whole milk.
08 - 1 cup of heavy cream.
09 - 2 tablespoons of tomato paste.
10 - 2 bay leaves.
11 - 1 pound of jumbo shrimp, peeled and deveined.
12 - 12 ounces of crab meat.
13 - 1/4 cup of dry sherry.
14 - 1 teaspoon of Old Bay seasoning.
15 - 1/2 teaspoon of white pepper.
16 - Salt, to taste.
17 - Chopped scallions and fresh tarragon.
18 - Optional: crème fraîche.

# Instructions:

01 - Melt the butter in a large pot, then cook the onion and celery until soft.
02 - Toss in the garlic and sauté for a minute.
03 - Stir in the flour and cook for two minutes.
04 - Pour in the milk, stock, tomato paste, bay leaves, and Old Bay seasoning. Let it simmer for five minutes.
05 - Mix in the heavy cream and continue simmering for another five minutes.
06 - Drop in the shrimp, cooking for about 3-4 minutes. Stir in the crab meat and sherry, warming it for two more minutes.
07 - Take out the bay leaves, season with salt and white pepper, then top with scallions, tarragon, and crème fraîche if you'd like.
