Creamy Comfort Soup (Print Version)

# Ingredients:

01 - Heavy cream (1 cup)
02 - Salt and pepper to taste
03 - Garlic cloves (3, smashed)
04 - Fresh chives for garnish
05 - Chicken or vegetable broth (7 cups)
06 - Unsalted butter (3 tablespoons)
07 - Leeks, white and light green parts (4 large)
08 - Bay leaves (2)
09 - Fresh thyme sprigs
10 - Yukon Gold potatoes (2 pounds)

# Instructions:

01 - Rinse your leeks well, then slice up just the pale green and white pieces.
02 - Melt the butter, then soften the garlic and leeks until they're tender and see-through.
03 - Toss in potatoes, thyme, broth, and bay leaves. Simmer till the potatoes are soft.
04 - Fish out the herbs, then blend till it's silky using a stick blender or normal one.
05 - Stir in the cream, warm it up, season it the way you like, and sprinkle with chives.

01 - Serve chilled as Vichyssoise or enjoy it warm.
02 - Keep the cream out if freezing; it stores better.
