Put a small saucepan over medium heat. Toss in the butter and wait until it’s melted completely.

Stir in the garlic with the melted butter. Let it cook for about half a minute until it smells great—don’t let it brown.

Mix in the flour along with pepper, salt, and oregano. Stir without stopping to create a smooth thick mixture. Let it cook a minute or two to lose the raw flour taste.

Slowly pour in the milk, stirring all the time. Keep at it until the sauce starts thickening and looks smooth.

Take the pan off the heat, then mix in the Parmesan. Stir it around until it’s all melted and creamy.
