Creamy Chicken Gravy (Print Version)

# Ingredients:

01 - 1 medium onion, diced.
02 - 1 tablespoon olive oil.
03 - 1 tablespoon butter.
04 - 1½ lbs chicken breasts, sliced into strips.
05 - ½ teaspoon kosher salt.
06 - ¼ teaspoon ground black pepper.
07 - ½ teaspoon poultry seasoning.
08 - 3 tablespoons butter.
09 - 3 tablespoons all-purpose flour.
10 - 1¼ cups chicken broth.
11 - ¼ teaspoon kosher salt.
12 - ¾ teaspoon fresh thyme (or ¼ teaspoon dried thyme).
13 - ½ teaspoon black pepper.
14 - Hot mashed potatoes.
15 - 1-2 tablespoons plain Greek yogurt.

# Instructions:

01 - In a large pan, heat up the olive oil and butter. Add diced onion and cook for 5 minutes. Sprinkle chicken strips with seasoning mix. Cook chicken about 4-5 minutes per side until browned. Remove onion and chicken from pan and set aside to stay warm.
02 - On medium heat, melt butter. Stir in the flour and let it cook for 1 minute. Gradually add chicken broth while whisking until it becomes smooth. Toss in thyme and other seasonings. Let it simmer for 2-3 minutes till thick.
03 - Put chicken back into the skillet. Cover and cook for an additional 3-4 minutes. Turn off the heat, mix in yogurt, and serve the chicken and gravy over a bed of mashed potatoes.
