Creamy Chicken Gnocchi (Print Version)

# Ingredients:

01 - 3 cups fresh spinach leaves.
02 - 1/2 cup mozzarella cheese, shredded.
03 - 1/2 cup heavy cream or half-and-half.
04 - 1 cup chicken stock.
05 - 2 teaspoons minced garlic.
06 - 1 yellow onion, chopped.
07 - 5 tablespoons ghee or butter.
08 - 1.5 teaspoons smoked paprika.
09 - Red pepper flakes, parsley, and parmesan for topping.
10 - 1 cup diced mushrooms.
11 - 1 teaspoon Italian herbs mix.
12 - 1 pound gnocchi (potato).
13 - 1.5 pounds chicken thighs (boneless, skinless).

# Instructions:

01 - Sprinkle paprika, salt, and pepper onto the chicken. Sear in 2 tablespoons of the butter until browned, about 5-10 minutes each side.
02 - Melt the rest of the butter in the pan. Toss in garlic, herbs, onions, and mushrooms. Cook until they're soft.
03 - Stir in the broth, then slowly mix in mozzarella and cream until the sauce becomes thick.
04 - Return the chicken to the skillet and add the spinach and cooked gnocchi. Let it simmer for 2 minutes. Add toppings and enjoy.
