Creamy Cajun Sausage Pasta (Print Version)

# Ingredients:

→ Base

01 - 340g of smoked sausage (like kielbasa or Andouille)
02 - 225g of pasta (rigatoni or penne)

→ Veggies and Aromatics

03 - 1 cup of diced mixed peppers
04 - ½ cup of diced onions
05 - 1 cup of fresh spinach (optional)
06 - Chopped parsley for sprinkling on top

→ Sauce and Seasonings

07 - 2 tablespoons of Cajun spice mix
08 - 1 tablespoon of olive oil
09 - 1½ cups of chicken broth
10 - 1 cup of heavy cream
11 - 1 cup of grated Parmesan cheese
12 - ½ teaspoon of garlic powder
13 - ¼ teaspoon of cayenne pepper (optional)
14 - Salt and pepper to taste

# Instructions:

01 - Slice up the sausage into rounds. Dice the peppers and onions.
02 - Heat up the olive oil in a big skillet. Add the sausage and brown it. Take it out and set aside.
03 - In the same skillet, sauté the onions and peppers. Stir in the Cajun spices and flour, then pour in the broth and bring it to a boil.
04 - Toss the pasta into the sauce. Let it cook over medium heat, stirring occasionally, until the pasta is tender.
05 - Turn the heat lower, mix in the cream and Parmesan cheese. Stir until the cheese melts, then add the sausage back in to warm everything up.

02 - You can leave out the spinach if you want
