Pop the white chocolate chips into a microwave-safe bowl. Heat them for 30 seconds at a time, giving them a good stir in between until they're completely smooth.

Set the melted chocolate aside for a little bit to cool down, but don't let it set up and harden.

Grab a large bowl, toss in the Cool Whip and vanilla extract, and gently mix them together until combined.

Pour the cooled chocolate into your bowl of Cool Whip mixture in small amounts. Slowly fold everything together until fully mixed.

Sift the powdered sugar into the mixture, then carefully mix until it's smooth and fluffy.

Line an 8x8 pan with a sheet of parchment paper. Pour in the mixture and spread it out evenly.

Scatter the rainbow sprinkles over the top, pressing them in lightly so they stick.

Stick the pan in the freezer for 1–2 hours or until everything's firm. Slice into squares and enjoy cold.
