Sweet Amish Cinnamon Bread (Print Version)

# Ingredients:

→ Batter

01 - 2 large eggs
02 - 1 cup butter, softened
03 - 2 cups sugar
04 - 4 cups plain flour
05 - 2 teaspoons baking soda
06 - 2 cups buttermilk (or 2 cups milk mixed with 2 tablespoons vinegar or lemon juice as a swap)

→ Cinnamon Sugar Mix

07 - 2 teaspoons cinnamon, ground
08 - 2/3 cup sugar

# Instructions:

01 - Use a mixer to whip together butter, eggs, and the 2 cups of sugar until fluffy and smooth. Slowly pour in buttermilk, then add the baking soda and flour, mixing lightly until it’s all together.
02 - Scoop a little less than half the batter into two greased loaf pans. In a separate bowl, stir the cinnamon and sugar together. Spread about three-quarters of this mixture over the batter in both pans.
03 - Put the rest of the batter on top of the cinnamon layer in both pans. Sprinkle the last of the cinnamon sugar on top, then lightly swirl everything with a knife for a marbled look.
04 - Place the pans in an oven preheated to 350°F (175°C) and bake for 45 to 50 minutes. They’re done when a toothpick inserted in the middle comes out without batter. Let the loaves cool in the pans for 20 minutes before carefully taking them out.
