Chocolate Raspberry Treats (Print Version)

# Ingredients:

01 - 1 teaspoon vanilla essence
02 - 1 ½ cups softened cream cheese
03 - ½ cup powdered sugar
04 - ½ cup melted white chocolate chips
05 - ½ cup mashed fresh raspberries
06 - 1 ½ cups crushed graham crackers

07 - ¼ cup crushed freeze-dried raspberries
08 - 1 cup melted white chocolate chips

# Instructions:

01 - In a big bowl, stir together the softened cream cheese, vanilla essence, and powdered sugar until it's super smooth. Toss in the mashed raspberries and graham cracker crumbs, and fold gently until it’s all mixed up. Pop it in the fridge for about half an hour to let it firm up a bit.
02 - After chilling, grab a spoon and scoop out around a tablespoon of the mixture. Roll it between your hands to shape it into a ball. Line a tray with parchment paper and place the balls on it. Keep going until all the mixture’s used up. Let them sit in the fridge for an hour.
03 - Melt the white chocolate chips in a bowl using short bursts in the microwave, stirring after every 20 seconds. Once melted, dip each chilled cheesecake ball into the chocolate, covering it fully. Set the coated balls back onto the parchment paper. Sprinkle the crushed freeze-dried raspberries on top while the coating's still soft.
04 - Place the coated cheesecake bites back in the fridge. Let them chill for at least 30 minutes so the chocolate sets. When the coating is firm, they’re all set to be enjoyed!
