Whip together the softened butter, powdered sugar, and vanilla until the mixture turns smooth and creamy.

Gently add the egg white, then mix in the sifted flour and sea salt. Be careful not to overwork the dough.

Put the dough into a piping bag with a star nozzle. Pipe spaced-out swirls onto a baking mat.

Bake at 170°C (340°F) for around 12 to 15 minutes, or until the cookies are lightly golden.

Melt your chocolate using a double boiler. Dip one side of the cooled cookies into the chocolate, then let them set at room temperature.
