Heat up the strawberry mash and sugar in a small pot over medium. Once combined, pour in the dissolved cornstarch. Reduce to simmer and cook for about 3 minutes or till thickened, then let it cool down.

In a big bowl, beat the cream cheese and sugar until creamy. Crack in one egg at a time, mixing after each. Add vanilla, sour cream, and melted chocolate, and stir till smooth.

Pour your filling into the cooled crust. Spoon dots of strawberry sauce on top and swirl them gently with a knife or stick for a fun design.

Heat the oven to 325°F (163°C). Bake for about 45 to 50 minutes until the edges are firm, but the center is still slightly wobbly. Turn off the oven and leave it in there for an hour to cool gradually.
