Choco Fruit Cheesecake (Print Version)

# Ingredients:

→ Crust

01 - ¼ cup butter, melted
02 - 1 ½ cups of cookie crumbs made from chocolate biscuits

→ Cheesecake Filling

03 - 16 ounces of softened cream cheese
04 - ¾ cup of white sugar
05 - Two eggs
06 - 1 teaspoon of vanilla extract
07 - ½ cup of sour cream
08 - ½ cup of dark chocolate, melted

→ Strawberry Swirl

09 - ½ cup of pureed strawberries (use fresh)
10 - 2 tablespoons white sugar
11 - 1 teaspoon of cornstarch dissolved in 1 tablespoon of water

# Instructions:

01 - Take a bowl and mix chocolate crumbs with butter until they’re mixed well.
02 - Firmly press the crust mix into your springform pan, smoothing it evenly. Pop it in the fridge to chill while you work on the filling.
03 - Heat up the strawberry mash and sugar in a small pot over medium. Once combined, pour in the dissolved cornstarch. Reduce to simmer and cook for about 3 minutes or till thickened, then let it cool down.
04 - In a big bowl, beat the cream cheese and sugar until creamy. Crack in one egg at a time, mixing after each. Add vanilla, sour cream, and melted chocolate, and stir till smooth.
05 - Pour your filling into the cooled crust. Spoon dots of strawberry sauce on top and swirl them gently with a knife or stick for a fun design.
06 - Heat the oven to 325°F (163°C). Bake for about 45 to 50 minutes until the edges are firm, but the center is still slightly wobbly. Turn off the oven and leave it in there for an hour to cool gradually.
