Chicken Tortilla Instant Pot (Print Version)

# Ingredients:

01 - 3 chicken breasts without bones.
02 - 1 can (15 oz) of black beans, drained and rinsed.
03 - 1 can (14.5 oz) of crushed tomatoes.
04 - 1 can (10 oz) of diced tomatoes with chilies.
05 - Half an onion, chopped up.
06 - 1 cup of corn kernels.
07 - 4 cups of broth made from chicken.
08 - 2 teaspoons of ground cumin.
09 - 2 teaspoons of chili powder.
10 - 1 teaspoon of garlic-flavored salt.
11 - Tortilla strips (optional topper).
12 - 1 cup of shredded cheddar cheese (optional).
13 - Fresh cilantro (optional garnish).
14 - 1 avocado (optional add-on).

# Instructions:

01 - Dump everything except garnishes (chips, cheese, cilantro) into the Instant Pot. Seal the lid and make sure the valve's on 'sealing'.
02 - Pressurize and cook for 30 minutes on high.
03 - Quickly release the pressure so you can open it up.
04 - Take out the chicken and shred it up. Toss it back into the pot, give it all a stir, and dish it out with your favorite toppings.

# Notes:

01 - Frozen chicken breasts work too if that's all you have.
02 - Have the kids smash up tortilla chips for toppings!
03 - Get creative with whatever toppings you like.
