Chicken Potato Bites (Print Version)

# Ingredients:

01 - 1 pound of chicken breast (cooked and shredded).
02 - 4 potatoes (boiled and grated).
03 - Half a cup of diced carrots (cooked).
04 - Half a cup of finely chopped bell pepper.
05 - 1 cup of shredded mozzarella cheese.
06 - 1 egg.
07 - 3 tablespoons of corn starch.
08 - Salt, pepper, garlic powder, onion powder, chicken flavoring.
09 - 2-3 Serrano peppers (chopped).
10 - 1 tablespoon of parsley (chopped).
11 - Oil for frying.
12 - 1 cup of bread crumbs.
13 - Half a cup of flour mixed with a third cup of water.

# Instructions:

01 - Put everything into a big bowl and stir until it turns sticky.
02 - Make a thick batter with the flour and water, then dip the croquettes in it.
03 - Form the croquettes, coat them in flour, then roll them in bread crumbs.
04 - Heat oil, then fry each side for about 2-3 minutes until golden brown.
05 - Spray with oil, cook at 200°C for 10 minutes, flipping halfway through.

# Notes:

01 - You can prep the croquettes ahead of time and freeze them.
02 - Using an air fryer makes them lighter.
