Cozy chicken soup (Print Version)

# Ingredients:

→ Vegetables and Aromatics

01 - 4 large carrots, diced small
02 - 2 celery stalks, chopped finely
03 - 1 onion, thinly sliced
04 - 10 ml of fresh thyme
05 - 2 fragrant bay leaves
06 - 250 ml of frozen green peas

→ Proteins and Starches

07 - 1 cup of lentils
08 - 250 ml of orzo pasta
09 - 2 cooked chicken breasts, shredded gently

→ Liquids and Seasonings

10 - Salt and freshly ground pepper, to your liking
11 - A drizzle of oil for cooking
12 - 2 liters of chicken stock, homemade or store-bought

# Instructions:

01 - Warm up a bit of oil in a big pot over medium-high heat. Toss in your sliced onion and cook it until it turns see-through, giving it a gentle stir for about a minute.
02 - Throw in your diced carrots and celery, then pour in the chicken broth. Add the lentils, bay leaves, and thyme to the pot. Sprinkle in salt and pepper to taste. Bring it all to a boil, then lower the heat and let it simmer for around 10 minutes.
03 - Stir in the orzo pasta and pop the shredded chicken in as well. Let everything cook together for 10 more minutes, giving it the occasional stir to keep the orzo from sticking to the pot.
04 - Take the soup off the stove and toss in the frozen peas. Allow it to sit for a few minutes before serving nice and warm.
