Chicken Avocado Melt (Print Version)

# Ingredients:

→ Main

01 - 4 slices cheese (cheddar, provolone, or Swiss)
02 - 1 ripe avocado, cut into slices
03 - Salt and pepper as needed
04 - 1 tablespoon olive oil or other cooking oil
05 - 2 chicken breasts, boneless and without skin

→ Bread & Spreads

06 - 1 tablespoon Dijon mustard or similar
07 - 4 slices of ciabatta or sourdough bread
08 - Butter or oil, for grilling the sandwiches
09 - 2 tablespoons mayonnaise, store-bought or homemade

→ Vegetables

10 - 1 medium tomato, sliced to your liking
11 - 1 small red onion, cut into thin rings

# Instructions:

01 - Cook your sandwiches in butter or oil on medium heat. Flip after 3-4 minutes, or when crisp and cheese begins melting.
02 - Sprinkle salt and pepper on your chicken, then fry in oil for 6-7 minutes on each side until done. Rest and cut into slices.
03 - On each piece of bread, spread mustard and mayo. Pile on sliced chicken, avocado, cheese, tomato, and onion.
04 - Cut up the avocado and tomato, slice the onion, and get the cheese ready.

# Notes:

01 - Keep leftovers in a container with a lid.
02 - Reheat in the oven so it stays crispy.
