Chewy Banana Bars (Print Version)

# Ingredients:

→ Liquid Ingredients

01 - 1 cup mashed ripe bananas (about 2 medium)
02 - 1 large room-temp egg
03 - 1/2 cup softened unsalted butter
04 - 3/4 cup packed light brown sugar
05 - 2 teaspoons pure vanilla

→ Dry Ingredients

06 - 1/2 teaspoon table salt
07 - 1 cup plain flour
08 - 3/4 cup mini chocolate chips (save a handful for the top)
09 - 1/2 teaspoon baking powder

# Instructions:

01 - Set your oven to 350°F (177°C). Line an 8x8 pan with parchment so it hangs over the sides.
02 - Microwave the butter till liquid—it should take about 60 seconds. Let it cool a bit, roughly 10-15 minutes.
03 - In a mixing bowl, whisk together the salt, flour, and baking powder.
04 - Mix together the slightly cooled butter and sugar. Add mashed bananas, vanilla, and the egg, gently stirring till it's all mixed.
05 - Stir the dry mixture into the wet ingredients little by little. Fold in most of the chocolate chips, saving some for the top.
06 - Pour the batter into the pan, sprinkle the extra chips on top. Bake for around 30-35 minutes until the center feels set and a toothpick comes out clean.
07 - Cool completely. Use the parchment to lift out the bars, then slice them up.

01 - Keep in an airtight container at room temperature up to 4 days.
02 - You can refrigerate for up to a week or freeze for a month.
