Heat up a cast iron skillet and sauté the ground beef. Wait till about half of the beef gets a nice dark crust, then stir and crumble it up.

Take the cooked beef out of the skillet but leave the rendered fat in the pan.

Toss the mushrooms, bell peppers, and onions into the pan with butter. Let them sit for a minute or two to brown before stirring. Repeat until golden.

Place the browned beef back into the skillet.

Combine the cornstarch with beef broth in a small cup.

Pour in the ketchup, Worcestershire, salt, pepper, and the cornstarch-beef broth mix. Stir everything up well.

Let the mixture cook for a few minutes, just until it’s slightly saucy and most of the ingredients sit above the liquid.

Turn off the stove and mix the cheese into the beef mixture until melted.

Pile the beef mixture onto toasted brioche buns and dig in!
