Cheesy Chicken Hoagies (Print Version)

# Ingredients:

01 - 1 lb of thinly sliced chicken breast or thigh meat
02 - 2 tbsp of quality olive oil
03 - 1 fresh bell pepper—any color—sliced into strips
04 - 1 onion, thinly sliced
05 - 2 garlic cloves, minced finely
06 - 1 tsp of smoky paprika
07 - 1/2 tsp of freshly ground black pepper
08 - 1/2 tsp of fine sea salt
09 - 1/2 tsp of dried thyme for a hint of earthiness
10 - 1/2 tsp of oregano, dried
11 - 1 tbsp savory soy sauce, optional for a flavor boost

→ Bread and Toppings

12 - 4 soft hoagie rolls or sub rolls
13 - 4 slices of gooey American or provolone cheese
14 - Customize with toppings like caramelized onions, sautéed mushrooms, or spicy pickled jalapeños

# Instructions:

01 - Place a large skillet on medium-high heat and pour in the olive oil. Heat till the oil looks shiny and hot.
02 - Toss the sliced chicken in and stir occasionally. Cook until it's a beautiful golden color and cooked all the way through, around 5-7 minutes.
03 - Add the onion and pepper slices to the chicken and let them soften and caramelize slightly. This takes about 5 minutes.
04 - Mix in the minced garlic along with dried thyme, oregano, black pepper, paprika, and salt. Stir until the spices are fragrant, about 1-2 minutes.
05 - Stir in the soy sauce at this point if you want more depth of flavor in the filling.
06 - Put the hoagie or sub rolls in a toaster or under the broiler until they're slightly crispy and golden on the edges.
07 - Place a slice of cheese on the bottom half of a roll while it's still warm to help it melt a bit.
08 - Spoon a generous helping of chicken and vegetables onto each roll.
09 - Set the sandwiches under a broiler just for a minute or two. Keep an eye on them until the cheese turns bubbly and gooey.
10 - Top with any extras you like—mushrooms, more veggies, or jalapeños—and enjoy your loaded sandwich!
