Cheesy Meatloaf (Print Version)

# Ingredients:

01 - 2 eggs
02 - 255 grams of bacon
03 - 165 ml breadcrumbs
04 - Salt, pepper, and paprika to taste
05 - 900 grams ground beef
06 - 125 ml shredded mozzarella
07 - 125 ml BBQ sauce

# Instructions:

01 - Set the oven to 175°C to heat up.
02 - Combine the ground beef, eggs, spices, and breadcrumbs in a large bowl.
03 - Place a sheet of parchment paper inside a loaf pan.
04 - Put most of the bacon in the pan, draping the ends over the edges on both sides.
05 - Spoon about two-thirds of the meat mixture into the pan. Make a groove in the center, fill it with shredded mozzarella, and cover it up with the rest of the meat mix.
06 - Cover the top of the meatloaf with the remaining strips of bacon.
07 - Pour a third of the BBQ sauce over the top and pop it in the oven for 40 minutes.
08 - At the 40-minute mark, brush another third of the BBQ sauce over the meatloaf and return it to the oven for another 20 minutes.
09 - Coat the meatloaf with the leftover BBQ sauce just before taking it out of the oven.
10 - Serve the meatloaf nice and warm.

# Notes:

01 - Firm mozzarella works best for this dish.
