Cheesecake Cookies Strawberry (Print Version)

# Ingredients:

→ Cookie Dough

01 - ½ cup freeze-dried strawberries, crushed
02 - ¼ teaspoon salt
03 - ¼ teaspoon baking powder
04 - ½ teaspoon baking soda
05 - 1¾ cups all-purpose flour
06 - 1 teaspoon vanilla extract
07 - 1 large egg
08 - ½ cup brown sugar
09 - ½ cup granulated sugar
10 - ½ cup unsalted butter, softened

→ Filling

11 - ¼ cup strawberry jam or puree
12 - 1 teaspoon vanilla extract
13 - 2 tablespoons granulated sugar
14 - 4 oz cream cheese, softened

# Instructions:

01 - Mix strawberry jam, vanilla, sugar, and cream cheese until smooth. Chill in the fridge.
02 - Blend butter with both sugars. Stir in egg and vanilla, then work in the dry ingredients and strawberries. Let the dough rest in the fridge for 30 minutes.
03 - Take a tablespoon of dough, press it flat, add some filling, then cover with another flattened tablespoon of dough. Seal edges to form a ball.
04 - Pop them in a 350°F oven for about 12 to 15 minutes, until they turn golden.

# Notes:

01 - Keep them in the fridge for up to 5 days or freeze for 2 months.
02 - Make the dough 1 day in advance, if needed.
