Grab a mixing bowl and combine the flour with the cottage cheese. Use a spoon or spatula to stir everything together until a sticky but soft dough comes together. If it feels too gooey to handle, sprinkle in a little more flour, just one spoonful at a time, until it's workable.

Dust your counter or a clean surface with flour before placing the dough on it. Split the dough into four even parts. Press or roll each piece into a round or oval shape about 1/4 inch thick. You can use your hands or a rolling pin.

Warm up a non-stick griddle or skillet on medium heat. Once it’s good and hot, place a flatbread on the pan. Cook it for 2-3 minutes on each side, flipping once, until it gets golden spots and is fully done.

These flatbreads are best eaten warm. You can have them plain or top them with avocado, hummus, smoked salmon, or even a drizzle of honey!
