Cauliflower Steak + Sweet Potato Mash (Print Version)

# Ingredients:

→ For the Roasted Cauliflower

01 - 1 whole cauliflower head
02 - 2 tablespoons olive oil
03 - 1 teaspoon garlic powder
04 - Salt and pepper, to taste

→ For the Sweet Potato Mash

05 - 100ml soy cream
06 - 30g plant-based butter
07 - Zest from 1 orange
08 - 2 medium-sized sweet potatoes
09 - 1/2 teaspoon garlic powder
10 - Salt and pepper, as needed

→ For the Toppings

11 - 100g cooked lentils
12 - Cranberries (dried), 2 tablespoons
13 - 2 tablespoons chopped pistachios
14 - Fresh dill sprigs, a few

# Instructions:

01 - Slice the cauliflower into thick pieces. Coat each slice with olive oil and season generously with garlic powder, salt, and cracked pepper.
02 - Preheat the oven to 210°C. Roast the cauliflower for 30 minutes, turning the pieces halfway through until they’re nicely golden and tender.
03 - Boil the sweet potatoes until soft. Mash them well, then blend in soy cream, plant-based butter, orange zest, garlic powder, and salt and pepper to taste.
04 - Warm up the lentils. On a plate, spread some mash, place the roasted cauliflower on top, and spoon lentils over. Garnish with pistachios, cranberries, and fresh dill.
