Steam the cauliflower until it’s soft, then drain it well.

Mash the cooked cauliflower in a bowl. Stir in the Parmesan, breadcrumbs, egg, parsley, garlic, salt, and pepper. Mix until combined.

Shape the mixture into small patties.

Line a baking tray with parchment paper and place the patties on top. Brush them lightly with olive oil. Bake at 200°C (about 400°F) for 20-25 minutes, or until they’re golden and crispy.
