Crispy cauliflower patties (Print Version)

# Ingredients:

01 - 1 small cauliflower
02 - 1 egg
03 - 1/2 cup grated Parmesan
04 - 1/4 cup breadcrumbs

→ Seasonings

05 - 1 garlic clove, minced
06 - 1/4 cup chopped parsley
07 - Olive oil
08 - Salt and pepper to taste

# Instructions:

01 - Steam the cauliflower until it’s soft, then drain it well.
02 - Mash the cooked cauliflower in a bowl. Stir in the Parmesan, breadcrumbs, egg, parsley, garlic, salt, and pepper. Mix until combined.
03 - Shape the mixture into small patties.
04 - Line a baking tray with parchment paper and place the patties on top. Brush them lightly with olive oil. Bake at 200°C (about 400°F) for 20-25 minutes, or until they’re golden and crispy.

# Notes:

01 - These croquettes can be made ahead of time and reheated in the oven.
02 - They’re a great side dish or healthy snack option.
