Grilled Veggies Burrata Salad (Printer-Friendly Version)

# Shopping List:

→ For the salad

01 - 3 red beets, peeled and sliced
02 - 3 yellow beets, peeled and chopped
03 - 6 carrots, sliced lengthwise in half
04 - Olive oil for roasting
05 - Salt
06 - Fresh burrata cheese

→ For the dressing

07 - 2 tablespoons white wine vinegar
08 - 3 tablespoons olive oil
09 - 1 tablespoon honey
10 - 1 minced garlic clove
11 - 1 teaspoon finely chopped fresh rosemary
12 - Salt

# Let's Cook:

01 - Set the oven to heat up to 200°C.
02 - Coat the beets and carrots with olive oil and sprinkle with salt. Lay them on a baking sheet and roast them for 30 minutes until they’re tender and caramelized.
03 - Sauté the beet greens in a splash of olive oil for 2–3 minutes. Set aside.
04 - Whisk together the olive oil, white wine vinegar, honey, garlic, rosemary, and salt until combined.
05 - Mix the roasted veggies with the sautéed greens. Place the burrata on top, pour the dressing over everything, and serve right away.

01 - The veggies can be roasted earlier and served at room temperature.
